Homemade Chocolate Caramel Pecan Pie Recipe
3 cups pecan pieces
2/3 cup whipping cream
1/4 cup butter
1/4 cup sugar
1/4 cup confectioners sugar
14 oz. caramels
1 pkg. semi sweet baking chocolate
18 squares
1/2 tsp. vanilla
Prepare
Preheat oven to °350 F.In food processor chop 2 cups pecans until finely ground.In bowl mix chopped pecans with sugar and butter,press mixture into 9"pie plate.Bake 10 mins. or until light brown then let cool to room temperature.In microwave safe bowl melt 1/3 cup whipping cream and caramels,about 2 1/2 minutes on high.Stir twice while melting,add melted caramels to pecan shell and sprinkle remaining pecans on top.In small sauce pan on low heat melt chocolate remaining whipping cream confectioners sugar and vanilla.Pour over pie and chill for 2 hours before serving.
