Quick and Easy
Glazed Ham and Sweet Potatoes


Recipe ingredients:
1 18-ounce can sweet potatoes
( drained )
8 to 12 pearl onions ( peeled )
1/2 cup orange juice
2 tablespoons honey
1 tablespoon cold water
2 teaspoons cornstarch
1/2 teaspoon shredded orange peel
1/4 teaspoon allspice
1 pound fully cooked ham slice
( trim fat )

Prepare your recipe:
In a skillet combine sweet potatoes, onions and orange juice. Bring to a boil reduce heat. Cover and simmer for 20 minutes or until vegetables are tender. Stir together honey,cornstarch, orange peel, water, and allspice and add to skillet. Cook until thickened. Add sweet potatoes and ham slice over vegetables in skillet. Cover and simmer for 5 minutes. Place ham on platter; spoon vegetables over ham.
Serves 4.

Easy ground beef Chile
Recipe ingredients:

2 cans red kidney beans ( drained )
1 tablespoon vegetable oil
1 large onion ( quartered and sliced )
1 green bell pepper ( chopped ) 1 pound ground round
1 can (14.5 ounces) tomatoes
1 can mild green chile peppers
1 can (8 ounces) tomato sauce
1 tablespoon chili powder
1 1/2 teaspoons salt
1 small bay leaf

Prepare your Chile recipe:
In a large skillet, brown the onion, pepper, and ground beef in oil. Add the tomatoes, chile peppers, tomato sauce, and seasonings. Cover and simmer for 1 1/2 hours, add a little water if needed to keep from sticking, stir frequently. Add red kidney beans and cook 15 more mintues.
Serves 6
