Slow Cooker Beef Fajitas
Recipe ingredients:
1 1/2 pounds flank steak
8 ounces canned tomatoe ( chopped )
1/2 cup chopped onion
1 green pepper ( cut into thin strips )
1 jalapeno pepper (finely chopped )
1 tablespoon cilantro ( chopped )
2 cloves garlic ( minced )
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
12 soft flour tortillas
Prepare your crockpot recipe:
Cut steak into about 4 x 4 inch pieces. In crockpot combine steak meat, onion, green pepper, chopped jalapeno pepper, cilantro, garlic, chili powder, cumin and salt. Add tomatoes. Cover and cook on low for 8 hours.
Remove steak from crockpot and shred. Return meat to crockpot and mix well. Spread cooked mixture into flour tortillas roll up and serve.
Recipe makes 12 servings
