Chocolate Cream Pie
2 1/2 c. milk
2 tbsp. all-purpose flour
3 tbsp. cornstarch
3 squares unsweetened chocolate
(melt baking chocolate)
1 1/2 c. sugar
4 eggs (separated)
1 1/2 tsp. vanilla
1/2 tsp. salt
2 tbsp. butter
1/2 tsp. cream of tartar
1 - 9" graham cracker pie shell
Prepare
In double boiler scald 2 cups milk with melted chocolate stirring until smooth.Sift flour 1 cup sugar and salt , mix with remaining milk.Add to chocolate mixture stir constantly until thick cook another 10 mins.Remove from heat gradually add chocolate mixture to beaten eggs yolks.Return to boiler and cook 2 mins. stirring occasionally.Add butter and vanilla and pour into pie shell.Beat egg whites cream of tartar and remaining sugar 1 tsp. at a time into a meringue and top pie. Brown meringue in 425 degree oven about 5 mins. Cool to room temperature then chill and serve.

Coconut Cream Pie Recipe
3 c. milk
3 eggs separated
1/4 tsp. salt
2 1/2 tbsp. cornstarch
2/3 c. sugar plus 8 tbsp.
1 tbsp. butter
2 tsp. vanilla
1/4 tsp. cream of tartar
1/2 cup flaked coconut
1 - 9" baked pie crust
or graham crust
Prepare
Combine 2/3 cup sugar , cornstarch , salt and milk in saucepan beat egg yolks and blend in.Stir constantly over medium heat until mixture boils.Boil and stir one more minute.Remove from heat stir in vanilla and butter.Pour cooked mixture into bowl stir in coconut and pour mixture into pie shell. Beat egg whites cream of tartar and remaining sugar 1 tsp. at a time into a meringue and top pie. Brown meringue in 425 degree oven about 5 mins. Cool to room temperature then chill and serve.

Lemon Meringue Cream Pie Recipe
FILLING
1 - 9 inch Graham Cracker Pie Shell
3 egg yolks (beat slightly)
1 1/2 cups sugar
1/3 cup cornstarch
1 1/2 cups water
3 tsp. lemon peel (grated)
3 tbsp. butter
1/2 cup lemon juice
MERINGUE
3 egg whites
6 tbsp. sugar
1/3 tsp. vanilla
1/4 tsp. cream of tartar
Prepare
Preheat Oven to 400°.In medium sauce pan mix cornstarch and sugar.Stir in water gradually.Stir constantly over medium heat until thickened and boiling.Boil and stir one more minute.Stir half of sugar mixture into egg yolks.Add mixed yolks back to remaining pan mix.Boil and stir one minute.Remove from heat add butter,lemon juice,lemon peel stir well and pour into pie shell.For meringue beat egg whites and cream of tartar until fluffy.beat in sugar one tbsp. at a time.Continue beating until stiff.Mix in vanilla.Add meringue to top of hot pie filling.Bake 10 minutes until golden brown. Cool away from draft to room temperature then chill and serve.
