Mediterranean Chicken recipe

Recipe ingredients:

2 pounds white chicken meat pieces
( skinless )
1 14 1/2 ounce can cut up tomatoes
1/4 cup dry red wine
1 clove garlic ( minced )
2 teaspoon sugar
1 teaspoon dried basil ( crushed )
1 tablespoon water
1 bay leaf
2 teaspoons cornstarch
4 ounces cooked spaghetti
1/4 cup sliced pimiento-stuffed green olives


Prepare your recipe:
Rinse chicken and pat dry. In nonstick skillet brown chicken for 10 to 15 minutes until evenly golden brown. Add tomatoes, basil, wine, sugar, garlic, and bay leaf. Bring to a boil and reduce heat. Cover and simmer about 30 minutes or until chicken is tender. In a mixing bowl stir together water and cornstarch. Stir into tomato mixture in skillet. Cook and stir until thickened. Place chicken and sauce over cooked spaghetti. Garnish with olives.
Serves 4

A tasty and easy stew recipe
Chicken Fajitas

Recipe ingredients:
8 6 inch flour tortillas
1/4 cup plain low-fat yogurt
1 small onion ( sliced and separated into rings )
1 medium green pepper
( cut into bite-size pieces )
1 tablespoon cooking oil
9 ounces boned skinless chicken breast
( cut into 1 inch cubes )
1/3 cup salsa
2 cloves garlic ( minced )
2 cups shredded lettuce
1 green onion ( thinly sliced )

Prepare your recipe:
Wrap tortillas in foil. Place in a 300°ree; oven for 5 to 8 minutes or until hot. In a large skillet with nonstick spray. Add onion and garlic; stir-fry for 2 minutes. Add red pepper; stir-fry for 1 to 2 minutes more or until crisp-tender. Remove from skillet. Add 1 tbsp. oil to skillet.Stir-fry chicken 3 to 5 minutes until tender. Return vegetables to skillet and add salsa. Cook and stir one minute. Divide chicken mixture evenly in tortillas. Top with shredded lettuce and a spoon of yogurt and sprinkle with green onion. Roll up tortillas and serve.
Serves 4

Chicken and Broccoli Casserole
Recipe ingredients:

4 ounces medium flat egg noodles
2 1/2 cups chopped cooked chicken
1 10-ounce package frozen chopped broccoli
( thawed )
1/3 cup sliced green onions
1 10 oz. can condensed cream of mushroom soup
1/2 cup skim milk
2 oz. shredded Swiss cheese
( about a 1/2 cup )
Dash of pepper
Dash of Paprika


Prepare your recipe:
Cook noodles according to package directions and drain . In a 2-quart casserole stir together chicken, broccoli, noodles and green onions. In a medium mixing bowl stir together soup, milk, cheese and pepper. Stir into cooked noodles. Bake covered at 350° for 45 minutes or until heated through. Sprinkle with paprika.
Serves 6
