Mediterranean Chicken recipe
Recipe ingredients:
2 pounds white chicken meat pieces
( skinless )
1 14 1/2 ounce can cut up tomatoes
1/4 cup dry red wine
1 clove garlic ( minced )
2 teaspoon sugar
1 teaspoon dried basil ( crushed )
1 tablespoon water
1 bay leaf
2 teaspoons cornstarch
4 ounces cooked spaghetti
1/4 cup sliced pimiento-stuffed green olives
Prepare your recipe:
Rinse chicken and pat dry.
In nonstick skillet brown chicken for 10 to 15 minutes until evenly golden brown.
Add tomatoes, basil, wine, sugar, garlic, and bay leaf. Bring to a boil and reduce heat. Cover and simmer about 30 minutes or until chicken is tender.
In a mixing bowl stir together water and cornstarch. Stir into tomato mixture in skillet. Cook and stir until thickened.
Place chicken and sauce over cooked spaghetti. Garnish with olives.

Chicken and Broccoli Casserole
Recipe ingredients:
4 ounces medium flat egg noodles
2 1/2 cups chopped cooked chicken
1 10-ounce package frozen chopped broccoli
( thawed )
1/3 cup sliced green onions
1 10 oz. can condensed cream of mushroom soup
1/2 cup skim milk
2 oz. shredded Swiss cheese
( about a 1/2 cup )
Dash of pepper
Dash of Paprika
Prepare your recipe:
Cook noodles according to package directions and drain .
In a 2-quart casserole stir together chicken, broccoli, noodles and green onions.
In a medium mixing bowl stir together soup, milk, cheese and pepper. Stir into cooked noodles.
Bake covered at 350° for 45 minutes or until heated through. Sprinkle with paprika.
Serves 6
