Fresh Strawberry Pie Recipe
1 1/3 cups all-purpose flour
1/2 cup shortening
1/4 tsp. salt
4 tsp. and 1 tbsp.milk
( divided )
4 tsp. water
1 8oz. pkg. cream cheese
( softened )
2 tbsp. sugar
1 quart fresh strawberries
( sliced )
Glaze
1 3oz. pkg. strawberry gelatin
1/2 cup sugar
1 tbsp.cornstarch
dash salt
1 3/4 cups water
Prepare Pie Shell
In bowl mix shortening ,flour and salt until it is coarse crumbs.Add water and 4 tsp. milk slowly beating until dough forms a ball.Wrap in plastic wrap and refrigerate 1 hour. Roll out pastry place in 9" pie pan and flute edges.Line pastry pie shell with heavy duty foil and bake at 450° for 8 minutes,remove foil and bake another 6 minutes.Cool pie shell completely.
Prepare Pie Filling
In mixing bowl beat cream cheese ,sugar anf remaining milk until smooth.Spread over bottom of pie crust then add your strawberries into pie shell.
Prepare Pie Glaze
In saucepan ,combine sugar ,cornstarch ,salt and water,mix until smooth.Bring to a boil and stir for 2 minutes until thickened.Remove from heat and stir in gelatin until completely dissolved.Pour over berries and refrigerate until set.Serves 8

Pecan Cranberry Pie Recipe
2 c. cranberries
1 c. chopped pecans
6 tbsp. shortening
1 1/2 tsp. buttermilk
1 c. all purpose flour
2 tbsp. hot water
1/2 tsp.salt
3 eggs
2/3 c. sugar
1/4 c. melted butter
1 tsp. vanilla
Prepare Pie Shell
In bowl cream shortening and buttermilk.Add ice cold water slowly beating until fluffy.Mix in flour and salt. Wrap in plastic wrap and refrigerate 4 hours. Roll out pastry place in 9" pie pan and flute edges.
Prepare Pie Filling
In bowl combine eggs , corn syrup , sugar , butter and vanilla mix well.Stir in pecans and cranberries. Pour into pie shell and bake at 425° for 10 mins. reduce heat to 350° bake another 35-40 mins. Cool then cover and refrigerate before serving.
