Barbecued Beef Sandwiches
With homemade barbecue sauce
Recipe ingredients:
3 pound boneless beef chuck roast
1 tsp. pepper
2 tsp. salt
2 cups water
2 tbsp. vegetable oil
1 large onion ( chopped )
1 cup ketchup
1/4 cup Worcestershire sauce
1/4 cup cider vinegar
1 minced garlic clove
1 tablespoon chili powder
12 kaiser rolls
Or your favorite sandwich buns
Prepare your barbecue sandwiches:
Sprinkle roast with 1 tsp. salt and 1/2 tsp. of pepper.In a Dutch oven, brown your beef roast in oil and drain.Combine ketchup, water, vinegar, onion, chili powder, garlic, remaining salt, pepper and Worcestershire sauce.Pour mixture over your browned roast.Cover and bake at 325 °ree; for 2 1/2 to 3 hours or until meat is tender.
Remove your chuck roast and slice.Skim fat from juices in pan and return sliced meat.Serve on your favorite rolls.
Recipe makes 12 sandwiches

Barbecued Pork Sandwiches
Party picnic recipe feeds 20 to 30 guests
Recipe ingredients:
6 pound boneless pork shoulder roast
1/2 cup chicken broth
1/2 cup cider vinegar
4 tsp. minced onion
Dash pepper
1/2 cup sugar
1/2 cup soy sauce
2 celery ribs ( finely chopped )
4 tsp. ground mustard
4 tsp. paprika
30 sandwich buns
Preparing your barbecued pork sandwiches:
Sprinkle roast with pepper and place in roasting pan.Bake uncovered at 350 °ree; for 1 hour and 20 mintues or until meat thermometer reads 106 °.
Transfer your pork roast to a Dutch oven pan.In a mixing bowl combine the chicken broth, vinegar, soy sauce, sugar, celery, onion, paprika and mustard.Pour mixture over pork roast and
bring to a boil.Reduce heat, cover and simmer for 1 1/2 hours or until very tender.Shred meat with 2 forks and serve on sandwich rolls.
